Ingredients

Core Ingredients
  • 3 medium overripe bananas
  • 2 large eggs
  • 1 box (15.25 oz) yellow or spice cake mix
Optional Enhancements
  • walnuts or pecans for crunch
  • cinnamon, nutmeg, or vanilla extract for added flavor
  • chocolate chips for sweetness

Equipment

  • Loaf Pan
  • Mixing Bowl
  • Spatula
  • Oven

Method

  1. Preheat your oven to 350°F and grease or line a 9x5-inch loaf pan with parchment paper.
  2. Peel and mash the bananas in a large mixing bowl until slightly chunky.
  3. Whisk the eggs into the mashed bananas until the mixture is smooth and fully blended.
  4. Gently fold in the cake mix until just combined. Avoid overmixing to maintain a light texture.
  5. If desired, stir in any optional add-ins such as nuts, spices, or chocolate chips.
  6. Add the batter to the prepared pan and spread it evenly.
  7. Bake for 40 to 50 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Allow the bread to rest in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Use an oven thermometer to ensure your oven is properly preheated. Mix ingredients just until combined to avoid a dense loaf. To make muffins, divide the batter into a greased muffin tin and bake for 15–20 minutes.
