- Preheat the oven to 350°F (175°C) and lightly grease a standard loaf pan.
- In a medium-sized bowl, whisk together the flour, baking soda, salt, and cinnamon, then set it aside.
- In a large mixing bowl, mash the ripe bananas until smooth. Stir in the cottage cheese, eggs, vegetable oil, vanilla extract, and sugar.
- Gradually incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
- Pour the batter into the prepared loaf pan and bake for 55-60 minutes. Test for doneness by inserting a toothpick into the center — it should come out clean.
- Let the loaf cool in the pan for a few minutes, then transfer it to a wire rack to cool completely before slicing.
