  • ½ cup cottage cheese
  • 1 cup white granulated sugar
  • 2 large eggs

Method
 

  1. Preheat the oven to 350°F (175°C) and lightly grease a standard loaf pan.
  2. In a medium-sized bowl, whisk together the flour, baking soda, salt, and cinnamon, then set it aside.
  3. In a large mixing bowl, mash the ripe bananas until smooth. Stir in the cottage cheese, eggs, vegetable oil, vanilla extract, and sugar.
  4. Gradually incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 55-60 minutes. Test for doneness by inserting a toothpick into the center — it should come out clean.
  6. Let the loaf cool in the pan for a few minutes, then transfer it to a wire rack to cool completely before slicing.
