  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt

  • 4 pieces ripe bananas
  • ½ cup cottage cheese
  • 1 cup white granulated sugar
  • 2 large eggs
  • cup vegetable oil
  • 1 teaspoon pure vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and lightly grease a standard loaf pan.
  • In a medium-sized bowl, whisk together the flour, baking soda, salt, and cinnamon, then set it aside.
  • In a large mixing bowl, mash the ripe bananas until smooth. Stir in the cottage cheese, eggs, vegetable oil, vanilla extract, and sugar.
  • Gradually incorporate the dry mixture into the wet ingredients, stirring gently until just combined.
  • Pour the batter into the prepared loaf pan and bake for 55-60 minutes. Test for doneness by inserting a toothpick into the center — it should come out clean.
  • Let the loaf cool in the pan for a few minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For a touch of extra flavor, you can add a handful of chopped nuts or chocolate chips to the batter before baking.
