Ingredients

  • 8 large eggs
  • 1/4 cup milk or heavy cream for extra richness
  • Salt and pepper to taste
For the Filling
  • 1 tablespoon olive oil
  • 2 cups cooked chicken chopped or shredded
  • 1 cup mushrooms sliced
  • 1/2 onion chopped
  • 1/2 bell pepper chopped
  • 1/2 cup shredded cheese like cheddar, mozzarella, or feta (optional)

Method
 

  1. Preheat and Sauté: Preheat your oven to 375°F (190°C). Warm the olive oil in an oven-safe skillet over medium heat. Add the onion, bell pepper, and mushrooms, and sauté until tender, about 5-7 minutes.
  2. Add Chicken: Add the chopped cooked chicken to the skillet and cook for another 2-3 minutes to warm through.
  3. Prepare Egg Mixture: In a large bowl, combine the eggs, milk, salt, and pepper. Whisk until the mixture is smooth and slightly frothy.
  4. Combine and Cook: Pour the egg mixture evenly over the vegetables and chicken in the skillet. If using, sprinkle the cheese over the top. Stir gently to combine everything.
  5. Bake: Transfer the skillet to the preheated oven. Bake for 10-15 minutes, or until the eggs are fully set and the top is slightly golden brown.
  6. Cool and Serve: Carefully remove the skillet from the oven. Allow the frittata to cool for a few minutes before slicing and serving. It pairs well with a side salad or roasted vegetables.

  • Oven-Safe Pan: It’s essential to use a pan that can safely go from stovetop to oven. A well-seasoned cast-iron or oven-safe non-stick skillet is a reliable choice.
  • Don’t Overcook: Keep a close eye on your frittata. It should be fully set but still tender. Overcooking can make it dry and rubbery.
  • Customize Ingredients: Feel free to swap out the vegetables and proteins based on what you have in your fridge. Zucchini, spinach, kale, or sausage are all great additions.
