Ingredients
  

Tangy Peach Filling
  • 5 Ripe Peaches pitted and sliced
  • 1 tablespoon Cornstarch for thickening
  • 1 tablespoon Cane Sugar for sweetness
  • 1 teaspoon Fresh Lemon Juice the tangy secret!
  • 1 teaspoon Vanilla Extract a classic touch
Crumbly Oat Topping
  • 0.5 cup Whole Rolled Oats for texture
  • 0.5 cup Almond Flour nuttier gluten-free
  • 0.33 cup Packed Light Brown Sugar molasses flavor
  • 0.25 cup Crushed Walnuts or pecans
  • 0.5 teaspoon Cinnamon a must-have spice
  • 0.25 teaspoon Sea Salt brings out flavors
  • 0.25 cup Firm Coconut Oil or cold butter, cubed

Method
 

  1. Preheat oven to 400°F (200°C). Grease a 10-inch cast-iron skillet or baking dish.
  2. In a big bowl, gently toss the sliced peaches with cornstarch, sugar, lemon juice, and vanilla until nicely coated.
  3. In another bowl, mix together oats, almond flour, brown sugar, walnuts, cinnamon, and salt. Add cubed coconut oil or butter and rub with fingers until crumbly.
  4. Pour peach mixture into the skillet. Sprinkle oat topping evenly. Bake for 20-25 minutes, until topping is golden brown and peaches are bubbly.
  5. Let crisp cool for 5 minutes. Serve warm with vanilla ice cream. Enjoy!

Notes

For an extra zing, try adding a pinch of ground ginger or lemon zest to the peaches. Serve with vanilla ice cream or Greek yogurt.
