- Preheat oven to 400°F (200°C). Grease a 10-inch cast-iron skillet or baking dish.
- In a big bowl, gently toss the sliced peaches with cornstarch, sugar, lemon juice, and vanilla until nicely coated.
- In another bowl, mix together oats, almond flour, brown sugar, walnuts, cinnamon, and salt. Add cubed coconut oil or butter and rub with fingers until crumbly.
- Pour peach mixture into the skillet. Sprinkle oat topping evenly. Bake for 20-25 minutes, until topping is golden brown and peaches are bubbly.
- Let crisp cool for 5 minutes. Serve warm with vanilla ice cream. Enjoy!
Notes
For an extra zing, try adding a pinch of ground ginger or lemon zest to the peaches. Serve with vanilla ice cream or Greek yogurt.
