Method
- Preheat the oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
- In a mixing bowl, whisk together the flour, baking soda, and a pinch of salt.
- In another bowl, whisk together the eggs, sugar, vanilla, kefir and melted butter until smooth.
- Slowly add the wet ingredients to the dry, mixing until the batter is smooth.
- Transfer the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake to cool thoroughly on a wire rack.
Notes
Use Fresh Kefir: For the best tangy flavor and moist texture, ensure your kefir is fresh and has been stored properly.
Substitutions: If you don't have kefir, you can substitute it with an equal amount of buttermilk or plain yogurt.
