Ingredients
  

For the Kefir Sheet Cake
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup plain kefir at room temperature
  • 2 large eggs at room temperature
  • 1/2 cup unsalted butter melted and slightly cooled
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together the flour, baking soda, and a pinch of salt.
  3. In another bowl, whisk together the eggs, sugar, vanilla, kefir and melted butter until smooth.
  4. Slowly add the wet ingredients to the dry, mixing until the batter is smooth.
  5. Transfer the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake to cool thoroughly on a wire rack.

Notes

Use Fresh Kefir: For the best tangy flavor and moist texture, ensure your kefir is fresh and has been stored properly.
Substitutions: If you don't have kefir, you can substitute it with an equal amount of buttermilk or plain yogurt.
