Ingredients

For the Salmon
  • 4 (6 oz each) Fresh Salmon Fillets skin-on, wild-caught preferred
  • 2 tbsp Dijon Mustard or Olive Oil for coating the salmon
For the Herb Crust
  • 1/2 cup Panko Breadcrumbs
  • 1/2 cup Mixed Fresh Herbs, chopped e.g., parsley, dill, chives
  • 2 cloves Garlic, finely minced
  • 1 tsp Lemon Zest from about 1 lemon
  • 2 tbsp Olive Oil or Melted Butter to bind the crust
  • Salt and Black Pepper to taste
Optional Ingredients for Variations
  • Crumbled Feta Cheese
  • Grated Parmesan Cheese
  • Finely Chopped Nuts e.g., almonds, walnuts
  • Spices like Paprika or Cayenne

Equipment

  • Baking Sheet
  • Mixing Bowl
  • Oven

Method

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly coat with olive oil.
  2. Prepare the Herb Mixture: In a mixing bowl, combine the finely chopped herbs, panko breadcrumbs, minced garlic, and lemon zest. Add a pinch of salt and pepper. Drizzle in olive oil (or melted butter) and mix until the mixture resembles damp sand.
  3. Season the Salmon: Gently pat the salmon fillets dry with a paper towel to remove excess moisture. Season both sides with salt and pepper. Place the fillets skin-side down on the prepared baking sheet.
  4. Apply the Herb Crust: Brush the top of each fillet with a thin layer of Dijon mustard or olive oil. Gently press the herb mixture onto the salmon, creating a generous and uniform layer.
  5. Bake: Bake for 12–15 minutes, depending on the thickness of the fillets. The crust should be golden brown, and the salmon should flake easily with a fork.
  6. Rest and Serve: Remove the salmon from the oven and let it rest for 2–3 minutes before serving. Serve with lemon wedges and your favorite side dishes.

Notes

Pro Tips for Success

  • Use a Meat Thermometer: For perfectly cooked salmon every time, aim for an internal temperature of 145°F (63°C).
  • Don’t Skip the Lemon Zest: It adds essential brightness that balances the richness of the fish.
  • Experiment Freely: This recipe is very forgiving; try adding your own twist with different herbs, nuts, or spices.
